Chimay |
| The Chimay Brewery ("Bières de Chimay") is one of the best known Trappist Breweries in the world. The Belgian brewery was founded inside the abbey Notre-Dame de Scourmont, in the Belgian municipality of Chimay in 1863. The brewery produces three widely distributed strong pale ales and one medium strength pale ale (which is not sold outside the abbey). The brewing plant was updated in 1988, and now produces 120,000 hectolitres annually annually. Since 1876 the monastery has also made, and currently offers four, cheeses. Like many strong Belgian beers, those produced at Chimay age well and can be cellared for at least five years while maintaining quality. The Chimay Blue can be aged for upwards of fifteen years. |

Chimay Rouge |

Chimay Rouge or Red is noted for its coppery color, which makes it particularly attractive. Chimay Rouge is a 7% alc. vol and is the least of the three strong ales Chimay produces. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavor qualities of this beer very harmoniously. |

Chimay Triple |

Named Cinq Cents, this beer with its typical golden color, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavor, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. The Chimay Tripel is their driest of offerings but packs a punch of flavors. The alcohol is well hidden, coming in at and at 8% alc. Vol., but it is an easy drinking beer to sip and savor.

Chimay Grand Reserve |

Named Grande Réserve, it is principally distinguished by its character of a strong beer, Chimay’s strongest at 9% alc. vol. Considered to be the "classic" Chimay ale, it exhibits a considerable depth of fruity, peppery character. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Smells of sweet malts and dates, figs, black currants, and a slight alcoholic overtone enlighten the senses. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma, while revealing a light but pleasant touch of roasted malt. The taste continues to evolve and develop with a few years of age, and is extremely popular with the Belgian population.
